The principle is simple: the butter, placed in a bell-shaped container, is submerged in the cool water of the outer container. This contact with the water seals it off from the air and keeps it fresh.
The butter thus remains odorless, naturally protected from bacteria, stored at room temperature, and always soft, without ever going rancid.
